Featured Recipe: Ginger Spice Cookies

Mmm…smells like Christmas! And these cookies are delicious seasonal treats while hosting family and friends or when attending cookie exchanges. Here's this week's tasty go-to recipe recommended by Debbie McFadden that she discovered from her friends at the Iowa Egg Council!

Made with warm spices – ginger, cinnamon, cloves – these cookies are perfect for the cold winter months! These delicious cookies are rolled in spiced sugar before baking for extra flavor.

Key tip: Chilled dough is easier to handle and holds its shape better.

GINGER SPICE COOKIES

  • 3 1/2 c. all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 2 cups granulated sugar
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3 eggs, room temperature
  • 1/3 cups light unsulphured molasses

SPICED SUGAR

  • 1/3 cup turbinado or granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger

Yield: 6 1/2 dozen cookies

DIRECTIONS

  1. MIX flour, 1 Tbsp. ginger, 2 tsp. cinnamon, baking soda, salt and cloves in large bowl.
  2. BEAT 2 cups sugar and butter in mixer bowl on medium speed until light and fluffy, about 3 minutes. ADD eggs and molasses; beat on low speed until blended. Gradually ADD flour mixture, beating until blended.
  3. REFRIGERATE, covered, until firm enough to shape, about 1 hour or overnight.
